We are experimenting all summer with all the different recipes that we are able to make with what we grow in the garden. Some great successes, some that the little food critics said two forks down too.
Baked Hash Brown Nests with Fresh Cherry Tomatoes and Basil
Ingredients
- Frozen or fresh hash browns
- Eggs
- Salt and pepper to taste
- Fresh garden cherry tomato’s
- Fresh Basil
- Cooking spray
Step One
Place hash browns in a large greased muffin tin. Make a hollow like a nest. Bake the hash browns in a 400 degree oven for about 10 minutes. I did this because the hash browns where frozen and i wanted to brown them up before baking the eggs with them.
Step Two
Crack an egg into each hash brown nest. Then return the eggs to the oven and bake until desired doneness.
Step three
Scoop out baked nests. serve with cherry tomatoes and fresh basil. Enjoy!
