I don’t know about you, but during the week it can be tiring to cook dinner. On those days when my energy is low and all I hear is ‘what’s for dinner”, I like easy, tasty and quick. Naan bread makes a great pizza crust! I can find it in the bakery section of the grocery store, and with whatever toppings are on hand in the fridge, suddenly it is pizza night, bohemian style!
One of the nice things about doing a small individual sized pizza is that everyone can pick and choose what toppings to put on theirs. We had fresh pineapple and leftover ham and made hawaiian style Indian naan pizza. Doesn’t get much more bohemian than that! What is it about the flavor combination of pineapple and ham…it is so much better with fresh pineapple verses canned too.
This really isn’t much of a recipe, but more of an idea for a quick meal and a list of instructions on assembling ingredients. Great for anyone new to cooking. The amounts and toppings are up to you, but here is a list of what I did.
Ingredients:
Fresh pineapple chopped into small cubes
Ham chopped into small cubes
Cherry tomatoes, halved
pancetta, chopped into small cubes
Fresh sliced or shredded mozzarella cheese. I used both on different pizzas.
Pre-baked Indian naan bread.
Basil pesto sauce
Jarred pizza sauce.
Fresh oregano
Pinenuts
Method:
Preheat the oven to 375 degrees. Place the pizza stone in the oven if you are using one. Chop all of your toppings. Spread the chosen sauce on the naan bread, sprinkle the cheese, or lay the sliced fresh mozzarella on the sauced bread. Now add the toppings of your choice. I did one pizza with the following toppings and it was a masterpiece!
Pancetta
Tomato
Pinenuts
Fresh mozzarella slices
Basil pesto for the sauce
Pull the stone from the oven, place your pizzas on the stone, bake for about 15 minutes or until the cheese is melted.
Enjoy with a nice glass of wine and make someone else clean up while you relax!
