Friday and Saturday evenings I’m typically ready for a cocktail to help relax and to celebrate the week. I have recently been reaching for a glass of wine or a beer, but both of those lovely choices do not lend much room for creativity behind the metaphorical bar. I also thought it would be fun to start a regular section of the blog for cocktail recipes. Viola! Here is the first one, a colorful and fresh raspberry and key lime margarita!
With some trial and error (imagine the face you give when you suck on a lemon…opps) I think I have something that is not only delicious in its fully intoxicating version, but its mocktail version is a nice alternative for kids and non-drinkers too.
To make the Margarita you will need the following:
Tequila. Select a high quality tequila. I chose the Espolon blanco tequila.
2 pints of fresh raspberries
Fresh key limes enough to make 1/3 cup juice
Sugar. I did this to taste and added about 1/4 cup.
Margarita salt or coarse ground sea salt to rim the glass. Or if you prefer, sugar rim. I liked the salt!
A fine mesh strainer to be used to strain the seeds from the raspberry puree
Blender
Ice
Juice the limes. Puree the raspberries in the blender till smooth. Add lime juice and sugar and blend into pureed raspberry. Pour the puree though a fine mesh strainer to strain out the seeds. Add the amount of tequila desired. I added 2 shots per glass approximately Squeeze enough lime juice to rim glasses, then dip into either sugar or salt. Add ice to the glass and pour your margarita. Garnish with a cute little slice of key lime. Serves 2.
